Ingredients

  • 1 pound mussels cleaned
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • ¼ cup white wine
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste
  • 1 lemon cut into wedges

Instructions

  • Preheat oven to 400°F (200°C).
  • Melt butter in an oven-safe (preferably cast iron) skillet over medium heat.
  • Add garlic, cook for 1 minute.
  • Add cream and wine. Simmer for 5 minutes.
  • Stir in Parmesan cheese until melted.
  • Add mussels to the skillet.
  • Transfer skillet to oven. Bake for 10-12 minutes until mussels open.
  • Discard any unopened mussels.
  • Sprinkle with parsley, salt, and pepper.
  • Serve immediately with lemon wedges and baguette slices.
