Try a refreshing non-alcoholic blossom fizz chamomile mocktail, featuring a blend of chamomile tea, fresh lemon juice, honey, and sparkling water.

- 2 tablespoon dried chamomile flowers for tea
- 1 cup hot water
- 1 oz 30ml honey syrup (equal parts honey and water, mixed)
- ½ oz 15ml fresh lemon juice
- 3 oz 90ml sparkling water
- Ice cubes
- Dried chamomile flowers for garnish
- Dried cornflowers or other edible dried flowers for garnish optional
Steep 2 tablespoon of dried chamomile flowers in hot water for 5-7 minutes. Strain and let cool to room temperature.
In a shaker, combine 4 oz (120ml) of the cooled chamomile tea, honey syrup, and lemon juice.
Fill the shaker with ice and shake well for about 10-15 seconds.
Fill a glass with ice and strain the mixture over it.
Top with sparkling water and stir gently to combine.
Garnish with a sprinkle of dried chamomile flowers on top of the drink.
If desired, add a few dried cornflowers or other edible dried flowers for extra color and visual appeal.
