Equipment

  • Cheesecloth
  • Strainer (if you don't have cheesecloth, cover a strainer with a few layers of paper towels)

Ingredients

Instructions

Make labaneh dip overnight

  • Lay out two layers of cheesecloth over a strainer, and pour the yogurt into it. Tie the yogurt in the cheesecloth, creating a little sack that can be hung up. Hang cheesecloth with yogurt to dry over a sink for at least eight hours, and up to 24 hours.

Flavour labaneh dip

  • Add ½ teaspoon of cinnamon and ¼ teaspoon of salt to your freshly made homemade labaneh. Mix well to incorporate.

Dress crackers

  • Smear about a teaspoon of labaneh dip on your favourite crackers. Top each cracker with two or three thin slices of apple.
  • Finish off with salt, a drizzle of extra virgin olive oil and a pinch more cinnamon.

Expert Notes

You can use gluten-free crackers to make this snack gluten-free. If looking for a completely grain-free version, use an apple circle as the base and top the labaneh and cinnamon on it.
