Easy cowboy caviar dip with beans, corn, and fresh veggies in a zesty dressing. Great for parties, meal prep, or snacking.

- 4 large Roma tomatoes seeded and diced
- ½ red onion diced
- 15 oz can black beans rinsed and drained
- 15 oz can black eyed peas rinsed and drained
- 10 oz package frozen corn kernels thawed
- 1 green bell pepper seeded and diced
- 1-2 jalapenos seeded and diced
- 1 bunch cilantro chopped
Dressing:
- ⅓ cup olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon granulated sugar
- 1 lime juiced
- ½ teaspoon chili powder
- ¼ teaspoon garlic powder
- ¼ teaspoon cayenne pepper optional for more spice
- Salt and pepper to taste
Add the dressing ingredients to a small bowl and combine. Taste and adjust if needed.
In a large bowl, combine the cowboy caviar ingredients.
Pour the dressing on top and toss together.
Cover and refrigerate until ready to serve. Serve with tortilla chips.
