Easy cowboy caviar dip with beans, corn, and fresh veggies in a zesty dressing. Great for parties, meal prep, or snacking.

Ingredients

  • 4 large Roma tomatoes seeded and diced
  • ½ red onion diced
  • 15 oz can black beans rinsed and drained
  • 15 oz can black eyed peas rinsed and drained
  • 10 oz package frozen corn kernels thawed
  • 1 green bell pepper seeded and diced
  • 1-2 jalapenos seeded and diced
  • 1 bunch cilantro chopped

Dressing:

  • cup olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon granulated sugar
  • 1 lime juiced
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper optional for more spice
  • Salt and pepper to taste

Instructions

  • Add the dressing ingredients to a small bowl and combine. Taste and adjust if needed.
  • In a large bowl, combine the cowboy caviar ingredients.
  • Pour the dressing on top and toss together.
  • Cover and refrigerate until ready to serve. Serve with tortilla chips.
