Cranberry Topping
- 2 cups fresh cranberries
- ½ cup orange juice
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon cinnamon
- Pinch of sea salt
Wrapped Brie
- Puff Pastry
- 1 8-12 oz wheel brie cheese
- ⅔ cup walnuts roughly chopped
- 1 egg beaten
- 2 tablespoons honey
- 2 tablespoons butter
- 2 sprigs fresh thyme
- Salt to taste
- Sugar for sprinkling
Make cranberry topping: Combine cranberries, orange juice, maple syrup, vanilla, cinnamon, and salt in medium saucepan. Bring to boil over medium heat. Cook 10-15 minutes until cranberries pop and mixture thickens.
Preheat oven to 400°F.
Place puff pastry flat in baking dish. Center brie on pastry and trim small amount of rind from top only, leaving sides and bottom intact.
Spread cranberry mixture over brie. Top with walnuts and thyme. Drizzle with honey and dot with butter. Season with salt.
Cover with remaining pastry, sealing edges. Cut 3 slits in top for steam vents.
Brush pastry with beaten egg and sprinkle with sugar.
Bake 20-25 minutes until pastry is golden brown.
Serve warm with bread or crackers.
