Ingredients

Cranberry Topping

  • 2 cups fresh cranberries
  • ½ cup orange juice
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • Pinch of sea salt

Wrapped Brie

  • Puff Pastry
  • 1 8-12 oz wheel brie cheese
  • cup walnuts roughly chopped
  • 1 egg beaten
  • 2 tablespoons honey
  • 2 tablespoons butter
  • 2 sprigs fresh thyme
  • Salt to taste
  • Sugar for sprinkling

Instructions

  • Make cranberry topping: Combine cranberries, orange juice, maple syrup, vanilla, cinnamon, and salt in medium saucepan. Bring to boil over medium heat. Cook 10-15 minutes until cranberries pop and mixture thickens.
  • Preheat oven to 400°F.
  • Place puff pastry flat in baking dish. Center brie on pastry and trim small amount of rind from top only, leaving sides and bottom intact.
  • Spread cranberry mixture over brie. Top with walnuts and thyme. Drizzle with honey and dot with butter. Season with salt.
  • Cover with remaining pastry, sealing edges. Cut 3 slits in top for steam vents.
  • Brush pastry with beaten egg and sprinkle with sugar.
  • Bake 20-25 minutes until pastry is golden brown.
  • Serve warm with bread or crackers.
