Cucumber margarita mocktail with fresh cucumber, lime, and citrus, light and refreshing, easy to make and perfect for warm days.

- 1 medium cucumber peeled and sliced (reserve a few slices for garnish)
- ⅓ cup of fresh lime juice about 1-2 limes
- 1 tablespoon of agave syrup or honey adjust to taste
- ½ cup of orange juice
- ½ cup of sparkling water or soda of your choice
- Ice cubes
- Fresh mint leaves for garnish optional
If using a salted or sugary rim, rub a lime wedge around the rim of the glass and dip it into salt or sugar.
Blend the cucumber slices in a blender until smooth. For a smoother texture, strain through a fine-mesh sieve if desired.
In a shaker or pitcher, combine the cucumber purée, fresh lime juice, orange juice, and agave syrup or honey. Stir until well mixed.
Gently stir in the sparkling water or soda.
Fill the prepared glass with ice and pour the cucumber mixture over the ice.
Garnish with cucumber slices and fresh mint leaves.
