Ingredients

  • 1 duck breast
  • 1 baguette sliced and toasted
  • 2 cloves garlic peeled
  • 1 cup cherry tomatoes quartered

  • 2 tablespoon olive oil

Instructions

  • Score duck skin in a diamond pattern. Season with salt and pepper.
  • Sear duck breast, skin-side down, in a cold pan. Cook 6-8 minutes until skin is crispy.
  • Flip and cook 2-3 minutes for medium-rare. Rest for 5 minutes.
  • Dice finely.
  • Rub toasted baguette slices with garlic cloves.
  • Mix diced duck, tomatoes, basil, and olive oil. Season.
  • Spoon mixture onto garlic-rubbed toasts.
  • Serve immediately.
