Kombucha — a fizzy, fermented tea that has been around for centuries — has exploded in popularity recently. Once you discover how delicious it is, all its health benefits, and how to make kombucha at home, you’ll be ready to join the craze.

Ingredients

  • 4 cups boiling water
  • 4-6 tea organic black tea bags or 4-6 tablespoons of loose tea
  • 1 cup organic sugar
  • 8 cups cold water
  • 1 SCOBY purchase or get from a friend

Instructions

  • Brew the Tea:
  • Boil 4 cups water
  • Add 4-6 tea bags/tablespoons loose tea and steep 5-10 mins
  • Remove tea, add 1 cup sugar, and stir to dissolve
  • Add 8 cups cold water to cool to room temp
  • First Fermentation:
  • Add SCOBY to glass jar
  • Cover jar with cloth secured by rubber band
  • Let ferment in warm (75-85°F), dark place for 7-14 days
  • Bottle and Second Fermentation:
  • Remove SCOBY, strain kombucha into bowl
  • Pour into bottles using funnel, add flavors if desired
  • Seal bottles and let sit at room temp for 1-3 days to carbonate
  • Refrigerate to stop fermentation
