Equipment

  • 1L flip-top bottle or recycled clear glass bottle with a screw-top lid
  • Funnel and fine mesh sieve

Ingredients

  • 950 ml fermented kombucha tea
  • ½ to 1 passionfruit pulp
  • ½ - 1 teaspoon organic sugar optional
  • 2 tablespoon hot water If using sugar

Instructions

  • Clean the bottle and lid thoroughly with hot water and white vinegar. Rinse well.
  • If using sugar, dissolve it in 2 tablespoon of hot water.
  • Add the dissolved sugar (if using) and passionfruit pulp to the bottle.
  • Using a funnel with a fine mesh sieve, pour the fermented kombucha tea into the bottle, leaving 3-5 cm from the top.
  • Seal the bottle and ferment for 3-4 days at room temperature.
  • Refrigerate if you prefer your kombucha cold.
  • 'Burp' the bottle every 7 days by opening the lid and resealing to avoid explosions.
  • Strain the kombucha when serving and enjoy!

Expert Notes

  • Avoid colored glass bottles for storage as they may contain lead.
  • Flip-top bottles are recommended for better fizz and reduce the chance of explosions.
  • If using a recycled glass bottle with a screw-top lid, ensure the lid is closed tightly every couple of days.
