Ingredients

  • 1 duck breast
  • 1 baguette sliced and toasted
  • ¼ cup blackcurrant jelly
  • Salt and pepper
  • 1 tablespoon olive oil

Instructions

  • Score duck skin in a diamond pattern. Season with salt and pepper.
  • Sear duck breast, skin-side down, in a cold pan. Cook 6-8 minutes until skin is crispy.
  • Flip and cook 2-3 minutes for medium-rare. Rest for 5 minutes.
  • Thinly slice duck breast.
  • Spread jelly on toasted baguette slices.
