- 1 cup fresh carrot juice about 2-3 large carrots juiced
- 2 clementines Juice of
- 1 lime Juice of
- ½ red chili seeds removed, finely sliced
- ½ jalapeño chili seeds removed, finely sliced
- 1 teaspoon agave syrup or honey optional, for added sweetness
- Ice cubes
- ¼ cup Ginger ale more or less, to taste
- Thyme branches for garnish
- Lime wedges for garnish
In a shaker, combine the fresh carrot juice, clementine juice, and lime juice. If you like your mocktail a bit sweeter, add agave syrup or honey to taste.
Add the finely sliced red chili and jalapeño to the shaker. If you're sensitive to spice, you might want to start with less chili and adjust to your preference.
Fill the shaker with ice cubes, secure the lid, and shake vigorously for about 15-20 seconds to chill the mixture and infuse the chili flavors.
Strain the mixture into the prepared glasses filled with fresh ice cubes, leaving room at the top for ginger ale.
Top off each glass with ginger ale to add fizz and dilute the mocktail to your liking.
Garnish with a lime wedge, a sprig of thyme and small slices of chili.
