This non-alcoholic amaretto sour mocktail blends pineapple, lemon, and almond flavors for a refreshing twist on a classic drink.

Hosting winter nights with plenty of guests become more inclusive with this classic amaretto sour mocktail. After missing the distinctive sour flavor, almond aftertaste, and frothy top of this classic cocktail at parties, I set out to create a non-alcoholic version that captured its essence.
My first few attempts fell a bit flat—too sweet or too sour, never quite hitting that perfect balance. Then, I landed on a secret ingredient - pineapple juice.
Once I tried pineapple juice in my sour, I knew I was on the right track. I experimented with pineapple juice for natural sweetness and body, paired with almond extract for that distinctive amaretto flavor, and then we were getting close, baby. Add in some egg whites for the signature frothy top that makes an amaretto sour so distinctive, and you've got the perfect mocktail.
Besides the pineapple, the recipe calls for sweet simple syrup to balance the tartness of the lemon juice. I typically make my own by dissolving sugar in water - see how to make my homemade simple syrup (or go crazy with orange simple syrup or raspberry syrup).
And to make this a sour, add a dash of bitters adds complexity and depth, enhancing the drink's overall flavor without overpowering it. I find that it rounds out the sweetness and acidity beautifully. I also use this brand in my non-alcoholic whiskey sour and Aperol spritz.
You NEED this for the almond flavor.

Top Tips for NA Amaretto Sour
Use fresh juices: Always opt for fresh lemon juice instead of bottled juice. Freshly squeezed lemon juice has a brighter and more vibrant flavor that significantly enhances the drink. It makes a noticeable difference in the overall taste.
Adjust sweetness to taste: Depending on your preference, you can adjust the amount of simple syrup in the recipe. If you like a less sweet drink, start with a smaller amount and gradually add more until you reach your desired sweetness.
Experiment with garnishes: While lemon slices and Amarena cherries are classic garnishes, feel free to get creative! You can try adding fresh herbs like mint or basil for an aromatic twist, or even a splash of club soda for added fizz.
