Make homemade raspberry simple syrup for cocktails, mocktails, pancakes, ice, and more! This easy syrup recipe gives intense raspberry flavor to everything you mix with it.

Making recipes for fruit syrups have always been challenging because each fruit is different. The usual ration of 1:1 doesn't always work, because some fruit are more tart than others — and many are very sweet naturally.
The raspberries' natural tartness balances perfectly with the regular level of sugar, creating a syrup that's not overly sweet. Simmering the berries on gentle heat releases their intense flavor and beautiful color without requiring any artificial ingredients.
This syrup takes just 15 minutes to prepare, plus cooling time. I love making it during raspberry season, around July to September, when the berries are at their peak. They're so perfect for summer brunches or afternoon desserts.
I started making this syrup after bringing home too many raspberries from the farmers market one weekend — it was a good deal and I got too excited! What used to be a way to only preserve them quickly became a staple in my pantry. Friends now recognize the distinctive pink tint in their drinks and know they're going to have a good glass.
This raspberry syrup is the signature ingredient in my readers' favorite iced matcha latte with coconut milk and raspberry simple syrup.
3-Ingredient Simple Syrup Recipe

You only need three ingredients for this syrup: raspberries, sugar, and water (if you even count that as an ingredient). The base for the syrup, raspberries bring a natural tartness and vibrant color. I prefer fresh when available, but frozen works just as well, especially when fresh berries aren’t in season. If you have some leftover raspberries, use in my raspberry mocktail.

Top Tips For Homemade Raspberry Simple Syrup
Use fresh raspberries when possible: Fresh raspberries give the syrup a cleaner, more vibrant flavor. However, frozen raspberries work just as well, especially when fresh berries aren't in season.
Adjust sweetness to taste: If you prefer a sweeter syrup, you can add more sugar while simmering. Start with the recommended amount and taste before adding more to avoid it becoming too sweet.

Storage
You may store the raspberry syrup in the refrigerator for up to 2 weeks. Be sure to use a clean spoon or utensil when handling the syrup to avoid contamination. If you notice any separation, simply shake the jar before using.

Other Simple Syrups to Try
If you’re enjoying homemade raspberry syrup, you may want to try other fruit syrups for variety. For something sweet and floral, the rose simple syrup or lavender syrup is the way to go. When you’re looking for something light and refreshing, a watermelon simple syrup or cranberry syrup brings a summery sweetness to drinks or can be drizzled over fruit salads.
