When I think about the holidays, I don't think about the lights, the hot chocolate, or even the presents - no its gingerbread, and more specifically, these gingerbread cupcakes with a buttery caramel and cinnamon frosting.

Right after the Halloween decorations come down, like clockwork, the phantom reminders of my gingerbread obsession start whispering from the kitchen: "Gingerbread…" I try to ignore it. I tell myself, "No, I'll just make pumpkin spice bars instead."
But the whisper persists. Gingerbread… It's not even December yet! One morning I try to enjoy my pumpkin spice latte just like everyone else, yet all I can think about is gingerbread syrup in that latte.
I resist. I promise I'm trying. I distract myself with other, more seasonal baking projects. Yet the voice only grows louder.
Finally, I crumble under the pressure (unlike these gingerbread cupcakes, which stay moist for days).
I open the spice drawer.
My hand hovers over the ginger, tucked neatly at the back, almost glowing like a beacon. I grab the nutmeg, the cinnamon, and finally surrender.
I accept that gingerbread-inspired baking is simply indispensable in my life. And so, I baked these gingerbread cupcakes. And because one indulgence never comes alone, I also gave in to temptation with these mini gingerbread cheesecakes and these spiced gingerbread granola cookies.

When I pulled them out of the oven, the warm, Christmas scent filled the house. Even though it is still fall and the pumpkins are still on the lawn, I finally felt at peace.
Ingredient Highlights for Gingerbread Cupcakes

Ginger
Surprise, surprise, ground ginger gives these cupcakes their personality. It's the spark, the warmth, the unmistakable note that says "this is gingerbread."
Molasses
Molasses adds deep sweetness and dark caramel color that define a gingerbread dessert.
Buttermilk
Buttermilk is the secret to tender cupcakes. It reacts with baking soda to create lift while keeping the crumb moist. It's the difference between dry cupcakes and ones that stay soft for days.
(Full ingredient quantities are listed in the recipe card below.)

Tips for Making the Cupcakes
- Mix gently. Overmixing can make the crumb tough. Stir until the batter just comes together.
- Use room temperature ingredients. It's what makes the texture cloud soft.
- Mind your molasses. Unsulphured is best for balanced flavor.
- Even filling. Fill each cupcake liner about three quarters full for perfect domed tops.

The Caramel Buttercream Frosting
Let's talk frosting, because this caramel buttercream is the showstopper. Personally, I think it blows the traditional cream cheese frosting out of the water!
It's creamy, silky, and has that irresistible sweet-salt balance that pairs beautifully with spiced cake. I whip room temperature butter until fluffy, then blend in powdered sugar, cool caramel sauce, and a touch of cinnamon. The result is a frosting that's smooth, luxurious, and perfectly pipeable.
A drizzle of caramel on top makes them café worthy. Or add a tiny gingerbread cookie if you're feeling festive. Either way, this frosting transforms simple cupcakes into a full blown celebration.

Top Tips for the Caramel Buttercream Frosting
- Cool cupcakes completely. Even a hint of warmth will melt your buttercream!
- If your frosting is too soft, chill briefly. Ten minutes in the fridge gives perfect piping texture.
- If your frosting is too thick, add a bit of milk or more caramel sauce.
- For bakery style swirls, use a 1M or 2D piping tip and apply steady pressure from the center outward.
Storage Instructions

Here's how to keep your gingerbread cupcakes as good as day one.
• Room temperature: Store frosted cupcakes in an airtight container for up to 2 days. The spices deepen and the texture stays moist.
• Freezer: Freeze unfrosted cupcakes only. Wrap individually and store up to 2 months. Thaw at room temperature, then frost with fresh caramel buttercream.
• Buttercream storage: Keep leftover frosting refrigerated in a sealed container for up to a week. Bring it back to room temperature and re-whip before piping.

- 1 teaspoon baking soda
- 2 tsps ground ginger
- 1 tsp ground cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon ground nutmeg optional
Wet Ingredients for the Gingerbread Cupcakes:
- ½ cup unsalted butter melted and slightly cooled, (1 stick/113g)
- ½ cup brown sugar (light or dark) (unsulphured, 115g)
- ⅓ molasses
- 1 large egg
- ¾ cup buttermilk (180ml)
- 1 teaspoon vanilla extract
For the Caramel Buttermilk Frosting:
- ⅔ cup unsalted butter softened to room temperature, 150g
- 3⅔ cups powdered sugar sifted, 450g
- 6 tbsps caramel sauce store-bought or homemade, cooled
- Pinch cinnamon
Instructions
Making the Gingerbread Cupcakes:
- Set your oven to 350°F (175°C). Line a cupcake tin with paper liners or lightly grease each cup.
- In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and nutmeg (if using).
- In a separate bowl, whisk together the melted butter, brown sugar, and molasses until fully combined. Add the egg, then whisk in the buttermilk and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combine, don't overmix! The batter will be thick, and overmixing could result in dense cupcakes.
- Divide the batter evenly among 8 muffin cups, filling each about three-quarters full.
- Place the cupcake tin in the oven and bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean. Let the cupcakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely before frosting
Frosting the Cupcakes:
- While the cupcakes bake, beat softened butter, sifted powdered sugar, caramel sauce, and a pinch of cinnamon using a hand or stand mixer on medium speed for 2-3 minutes, until light and creamy.
- Fit a piping bag with a tip of your choice-Wilton 1M or 2D for swirls, or a large round tip for a smooth dome. Fill the piping bag with the buttercream.
- Once the cupcakes have completely cooled, hold the piping bag straight above the center of each muffin. Apply even pressure, starting from the center and spiraling outward and upward to form a swirl. Stop squeezing and lift the tip gently.
