Fall in love with these pumpkin spice bars made with pumpkin and cinnamon. Topped with a luscious glaze, it's the perfect fall party dessert!

I wanted a fall treat that could be enjoyed without forks or plates—just something you can grab, eat, and love, or serve at a party for a lot of people. I wanted an easy recipe, something both my family and I could enjoy during an afternoon with tea or while unwinding with a good book. That's how I came to develop this pumpkin spice bar recipe!
As the weather cools, I start craving pumpkin spice, cinnamon, and that rich pumpkin flavor that feels like home. The inspiration for this pumpkin dessert came from my search for the perfect finger food. I’ve always loved classic pumpkin pie, pumpkin bread, and pumpkin cake, but I needed something smaller and easier to enjoy on a cozy day.
These pumpkin spice bars deliver that comfort minus the mess! Each bite is filled with pumpkin pie spice, nutmeg, cinnamon, and a hint of clove, making these bars the best pumpkin dessert for fall baking.

What makes me love these pumpkin spice bars the most is their ease and versatility. They’re made with pure pumpkin spice, lots of spices, and a few classic baking essentials. And with such a simple recipe for fall, you can bake a batch for any occasion—or just because.
Pumpkin bars like these have a nostalgic, timeless quality. They remind me of old-fashioned pumpkin pie but are simpler and quicker to make, especially with a generous layer of maple or cream cheese frosting over the top. They’re absolutely delicious and versatile enough for family gatherings, tea with the girls, or as a fall treat after a long day.

Directions to Make Pumpkin Bars
Preheat and Prepare
Preheat your oven to 350°F and line a 9x13 inch baking pan with parchment paper, allowing some paper to hang over the sides for easy lifting. Lightly grease the parchment to prevent sticking.
Combine Dry Ingredients

In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt. This blend of dry ingredients gives the bars their structure and a classic pumpkin-spice taste.
Mix Wet Ingredients

In a large mixing bowl, combine melted butter and granulated sugar with a whisk. Add the egg, vanilla extract, and pumpkin puree, and mix until smooth. This mixture makes for super moist bars and captures all those favorite fall flavors.
Blend and Bake

Gradually add the dry ingredients into the pumpkin mixture, stirring gently with a spatula or electric mixer on low speed until just combined. Pour the batter into the prepared pan and smooth it out with a spatula.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the bars cool completely in the pan before adding frosting.
Prepare the Glaze

In a small bowl, mix powdered sugar, milk, and vanilla with a whisk until smooth. Add a touch of pumpkin pie spice for extra warmth. Drizzle this frosting over the cooled bars, or spread for a more even topping.
Cut and Top with Frosting

Once cooled, cut into bar-sized pieces and drizzle over a generous amount of frosting. Top with fresh cranberries or any other toppings you like.

Storage and Freezing Instructions

To store, keep these pumpkin spice bars in an airtight container in the refrigerator for up to a week. If you’re looking to freeze them, wrap each bar in plastic wrap and place them in a freezer-safe container for up to 3 months. When you’re ready to enjoy them, let the bars thaw at room temperature.
Top Tips
- Use room temperature ingredients like butter and egg for smooth mixing.
- Line the baking pan with parchment paper to make removing the bars easier.
- Whisk the glaze until smooth for a silky drizzle that coats the bars perfectly.
