Make the Strawberry Rhubarb Simple Syrup
Place water in a saucepan over medium heat and bring it to a slow boil. Stir in the sugar until completely dissolved. Add the chopped rhubarb and strawberries, letting the mixture simmer and stirring occasionally.
Next, remove from heat and let the syrup cool. Finally, strain the mixture into a sealed glass jar and store it in the fridge for up to two weeks.
Prepare the Alcohol-Free Gin Mocktail
In a pitcher filled about one-third with ice, combine the strawberry rhubarb syrup and fresh lemon juice. Pour in the sparkling pink lemonade. Add thin slices of lemon, strawberries, and rhubarb for garnish.

- 2 cups chopped frozen strawberries

- 1 ยฝ cups Gin alternative
- 1 ยฝ oz lemon juice Ice cubes
- 1 750 ml bottle alcohol-free sparkling pink wine
- 1 lemon
- Rhubarb stalks, strawberries and lemon, for garnish sliced thinly
Instructions
Strawberry rhubarb simple syrup:
- Place the water in a saucepan over medium heat and bring to a slow boil. Add the sugar and stir until dissolved. Add the rhubarb and strawberries and simmer for 3 to 5 minutes, stirring occasionally. Remove from the heat and let cool.
- Strain into a sealed glass jar and store in the fridge for up to 2 weeks.
