  • Reduce heat to low and let simmer for 10 minutes.
  • Remove from heat and let the syrup steep for 30 minutes to infuse the cinnamon flavor.
  • Remove the cinnamon sticks.
  • Stir in the vanilla extract, if using.
  • Allow the syrup to cool completely before transferring it to an airtight container or bottle.
  • Store the cinnamon syrup in the refrigerator for up to 2 weeks.
