Ingredients

  • 1 cup pineapple chunks
  • ½ cup ice or frozen pineapple
  • 1 cup pineapple juice or ½ cup pineapple chunks and ½ cup water, blended
  • 1 cup cream of coconut or coconut milk Use unsweetened coconut milk (canned or carton), or unsweetened coconut cream for the creamiest results. Can be substituted with any non-dairy milk.
  • 2 teaspoons sugar (optional)
  • Fresh pineapple wedges as garnish
  • Maraschino cherries as garnish. Can use any other cherry or omit altogether.

Instructions

  • Add ice, pineapple chunks, pineapple juice, and coconut milk to a high-powered blender.
  • Puree until smooth.
  • Pour into Pina colada mixture into glasses.
  • Top each glass with a pineapple wedge and a maraschino cherry.
  • Serve mocktail immediately!
