- 2 oz Non-alcoholic white rum I used Lyre's white cane spirit
- 1 ½ oz cream of coconut
- 1 ½ oz pineapple juice
- ½ oz lime juice
To a blender, add ice, cream of coconut, pineapple juice, lime juice, and lyres White rum.
Blend until smooth and pour into a chilled glass.
Garnish with a pineapple wedge and leaf.
- Chilled Glasses: If you can, place your glasses in the freeze the night before. This will prevent the ice from melting as fast, keeping your blended piña colada chilled and its creamy texture for longer. Chilling the blender and its blade will also help in this.
- Cream of Coconut: If you bought the can like I did, there is a layer of coconut cream on top. Now it sounds kind of like the same thing, but they're not. Below that thick, creamy coconut layer is the "cream of coconut," which is needed for this recipe. It's syrupy and slightly cloudy in color. Don't toss that coconut cream tho! Save it for other recipes.
