Make your own caramel ribbon crunch frappuccino at home. Rich, creamy, and topped with caramel crunch. Just like Starbucks, but faster!

There was one summer when I craved cold drinks almost every day. Slushies, milkshakes, frappuccinos, anything cold and would keep me cool for hours.
I was in my early 20s, and clueless about what coffee should taste like. Suffice to say, I left half my weekly paycheck at Starbucks.
But since then, I've gotten smarter. I've started developing my own Starbucks copycat recipes like this one, my copycat chai creme frappuccino recipe, and pineapple passionfruit refresher. And this homemade caramel ribbon crunch frappuccino is exactly like what I would order in my Starbucks rotation.
Rich espresso blends with heavy cream and caramel syrup, topped with fluffy whipped cream and homemade caramel crunch pieces that add the perfect contrast in texture.
Each sip of smooth coffee is balanced by rich caramel sweetness, while the crunchy caramel pieces create bursts of buttery flavor that make it feel like anything but homemade. The heavy cream creates that signature thick, milkshake-like texture that makes frappuccinos so irresistible.
Ingredient Highlights:

Espresso shots or brewed coffee - Adds a rich, bold flavor that balances the sweetness of the caramel. I prefer espresso for a stronger coffee taste, but brewed coffee works well for a milder version.
Caramel syrup – Gives the frappuccino its signature caramel flavor. I’ve used store-bought syrups, but homemade caramel sauce can make it even more decadent.

If you're craving the sweet, creamy, and crunchy goodness of a Starbucks caramel ribbon crunch frappuccino, this copycat recipe is a perfect way to recreate it at home. With a rich caramel base, smooth whipped cream, and a crispy caramel crunch topping, this treat will satisfy your sweet cravings.
Tips for the Caramel Crunch Topping
Heat it over medium heat, stirring frequently to prevent the sugar from burning.
Continue to cook until the mixture turns a golden brown color (usually takes about 5 minutes).
Once the caramel reaches the right color, pour it onto a piece of parchment paper. Let it cool in the freezer until it hardened.
After the caramel is solid, use a kitchen mallet or any similar tool to break it into small, crumbly pieces.

Making Homemade Caramel Syrup
Sometimes, I enjoy making homemade caramel rather than purchasing it. I like being in charge of the sweetness. Perfect for this Starbucks copycat recipe, or sprucing up your Pumpkin Spice Cold Brew or Mudslide Mocktail.

Instructions to Make Your Own Caramel Syrup
Super easy instructions for a quick homemade caramel syrup!

- Melt the sugar in a saucepan over medium heat. Stir constantly until it turns into a golden amber liquid.
- Once melted, add butter and stir until fully combined.
- Then, pour in the heavy cream while stirring. The mixture bubbles up, so I make sure to be cautious!
- After the cream is fully incorporated, stir in the vanilla extract and salt, if desired.
- Let the caramel simmer for 1-2 minutes to thicken slightly before removing it from the heat.
Once it’s cooled a bit, use as needed, and any leftovers can be stored in an airtight container for up to two weeks!
Tip for Assembling Caramel Ribbon Crunch Frap!
Adjust the sweetness: If you prefer a sweeter frappuccino, add a little extra caramel syrup or simple syrup to the blender. Just be careful, as the caramel crunch topping already adds sweetness.
Make the crunch topping ahead: The caramel crunch topping can be made in advance and stored in an airtight container. Or to save time, use crushed Werther’s Original candies instead of making caramel crunch.
Blend to your desired consistency: For a thicker frappuccino, add more ice, and for a thinner texture, increase the amount of heavy cream or milk. Adjusting the ice-to-liquid ratio gives you control over the final texture.
