My Mocktail Forest
– 1 cup pineapple chunks – ½ cup ice or frozen pineapple – 1 cup pineapple juice or ½ cup pineapple chunks and ½ cup water, blended – 1 cup cream of coconut or coconut milk – 2 teaspoons sugar optional – Fresh pineapple wedges as garnish – Maraschino cherries as garnish
Ingredients
– Add ice, pineapple chunks, pineapple juice, and coconut milk to a high-powered blender. Puree until smooth.
– Pour into glasses, top each glass with a pineapple wedge and a maraschino cherry. Serve immediately!
