Inspired by my love for the classic salty-sweet combo of Reese’s Peanut Butter Cups, I developed this recipe to offer a more nutritious snack option that still satisfies those cravings. I make my recipe with dark chocolate to cut back on the sugar, and the bitterness of the dark chocolate pairs wonderfully with the sweet dates.
Ingredients to Make Chocolate Covered Almond Butter Stuffed Dates

- Medjool dates: Naturally sweet and chewy, Medjool dates form the perfect base for this recipe. I strongly recommend Medjool dates for the stuffed dates recipe because they are packed fresh and creamier than other dates.
- Raw Almond butter: Adds a creamy, rich filling packed with healthy fats and a touch of nutty flavor.
- Dark chocolate: Bittersweet dark chocolate balances the sweetness of the dates, adding depth to each bite. A slab of chocolate or dark chocolate chips works for the coating of chocolate.
- Sea salt flakes: Just a pinch of flaky sea salt enhances the sweetness and adds a delightful salty contrast.

Directions to Make Stuffed Dates
Prepare the Dates

Slice each Medjool date lengthwise, removing the pit while keeping the date intact. Make sure to leave one side uncut so the date can act as a pocket for the filling.
Fill the Dates

Spoon a small amount of almond butter into each date, filling the center without overflowing. The almond butter adds a creamy texture that pairs perfectly with the sweet dates.
Melt the Chocolate

Melt the dark chocolate in a microwave-safe bowl or using a double boiler until smooth. Be careful not to overheat it, as dark chocolate can easily burn.
Coat the Dates

Using a fork or tablespoon, dip each stuffed date into the melted chocolate, making sure to coat it completely. Place the chocolate-covered dates on a parchment-lined baking sheet for easy removal later.
Sprinkle with Sea Salt

While the chocolate is still soft, sprinkle a few sea salt flakes onto each date. The salt will stick to the chocolate and add a touch of savory goodness to balance the sweetness.
Chill the Dates
Transfer the baking sheet to the fridge or freezer, letting the dates chill until the chocolate has fully hardened. This should take about 10-15 minutes. Once set, your delicious treat is ready to serve.
Storage Instructions for Chocolate Covered Dates
Store these stuffed dates in an airtight container in the fridge, where they’ll last up to a week. They also freeze well, so feel free to make a large batch ahead of time. If it's freezing, just let them thaw for a few minutes before enjoying.
Variations of this Healthy Snack

This recipe is incredibly flexible and can be adjusted to meet various dietary preferences. To make it vegan, simply use vegan dark chocolate. You can also swap almond butter for other fillings, like peanut butter, nut butter like cashew butter, tahini, or sunflower seed butter if you’re serving someone with nut allergies.
For a twist, add toppings such as crushed nuts, shredded coconut, or cacao nibs inside the dates, along with the almond butter. You can also try experimenting with the chocolate coating—opt for sugar-free or stevia-sweetened chocolate for a lower-sugar option. The possibilities are endless, and each variation brings a unique flavor to the table.
Accompanying Mocktails
These stuffed dates pair perfectly with refreshing, light mocktails. Try a Passion fruit and Coconut Water Mocktail for a zesty and cool contrast, or opt for a Non-Alcoholic Strawberry Daiquiri Recipe if you prefer something fruity.
A Chai White Russian Mocktail will complement the rich almond butter and chocolate for a more indulgent pairing. Alternatively, try pairing them with this creamy pina colada mocktail. These drinks not only cleanse your palate but also add a fun, festive vibe to your snack or dessert table.
