In reply to Diana L Taylor. So honestly, I've never done this. Most canning recipes have a much higher sugar-to-fruit ratio, at least 1:1 usually, and any water is extra. So I wouldn't feel safe recommending this.

Please clarify. In both the narrative, and your "Top tips", you say to muddle the mint and lemon slices - yet this is contrary to the recipe, as written.
Which is the correct method, please?

Do you have a recommendation for a zero alcohol brand of bitters (orange or otherwise)? Due to a health condition, I am not allowed any alcohol, not even the minimal amount one would get from a few drops of ordinary bitters. Thanks! LJS
