Make a vanilla lavender oat latte recipe at home in 5 minutes. The combination of lavender, vanilla, cold brew, and oat milk is perfect hot or enjoyed as an iced lavender oatmilk latte.

For some reason, spring gets me up and going more than any other season—and I feel like spring mornings deserve something special, like this vanilla latte with oat milk and lavender or vanilla cherry latte. The floral notes really bring on the spring feels. This dairy-free latte combines rich espresso with creamy oat milk, enhanced by homemade lavender syrup and a touch of vanilla. The result is a beautiful, café-style lavender latte that looks like regular coffee but with subtle layers of flavor.
You only need 5 minutes to make this once you have your lavender simple syrup ready—it's perfect for when you have a few minutes to spare before a morning meeting or before heading out. For more 5 minute concoctions, try my passion fruit margarita or non alcoholic chocolate mocktail.
It all started when I passed by a small coffee shop in Montreal and saw this on the signage outside (I know Starbucks also has a Starbucks iced lavender oatmilk latte - so this is my homemade copycat version). I didn't have time to buy and try it myself but I was so curious how it would taste like that I made it at home. The first versions were too strongly floral, but balancing the lavender with vanilla created the perfect glass of coffee. It's become one of my favorite flavored lattes to make, right up there with my sunbutter and cherry latte recipes.
Ingredient Highlights For Vanilla Lavender Oatmilk Latte

- Espresso (or strong brewed coffee) – This is the base of the latte. I’ve used both espresso and strong coffee, and while espresso gives a richer taste, a well-brewed coffee works fine if you don’t have a machine. Just make sure it’s bold enough to stand up to the oat milk and syrup.
- Oat milk – I prefer oat milk for its creamy texture and subtle sweetness, which pairs well with both vanilla and lavender. I’ve tried almond and soy milk, but oat milk gives the smoothest result without overpowering the floral notes.
- Vanilla extract – A small amount balances the lavender and rounds out the flavor. I’ve tested it without vanilla before, but it always felt like something was missing. If you have vanilla bean paste, that’s a nice upgrade.
- Lavender syrup – This adds the distinct floral touch. I learned early on that less is more—too much can dominate the drink. I stick to my homemade syrup recipe with dried lavender flowers for a cleaner flavor, but store-bought works in a pinch if it’s not overly sweet.
You can also try this recipe with chai syrup, cinnamon syrup, or rose syrup - let me know how you like the variation in the comments!

Instructions for Both Hot and Iced Vanilla Latte with Lavender and Oat Milk
Make the Hot Lavender Vanilla Oat Latte Recipe
Heat the Oat Milk

Start by heating your oat milk in a small saucepan over medium heat. Stir occasionally until it’s steaming, but not boiling. You want it hot enough to blend well with the espresso, but avoid letting it bubble over.
Optional: Froth the Milk
If you want a bit of foam, use a handheld frother to froth the milk once it’s heated. Frothing isn’t necessary, but it can add a nice texture to your latte.
Prepare the Mug
While the milk is heating, add lavender syrup and vanilla extract to your mug. Stir them together to blend the flavors before adding the coffee.
Add the Coffee
Pour in your prepared espresso or strong brewed coffee. Stir the coffee with the syrup and vanilla to combine.
Pour in the Milk
Slowly add the warm oat milk to the mug. Pour it gently, giving the drink a moment to blend as you go.
Top with Foam (Optional)
If you’ve frothed the milk, top your latte with a thin layer of foam. This is optional but adds a smooth texture to the drink.
Make Iced Lavender Oatmilk Latte Recipe
Prepare the Glass

Fill a glass with ice. The ice will help chill the drink right away and keep it refreshing.
Add the Lavender Syrup and Vanilla Extract

Pour the lavender syrup and vanilla extract directly over the ice. This helps them dissolve well as you add the liquid.
Add the Coffee
Pour in your espresso or strong brewed coffee. Stir the syrup and coffee together to make sure it’s mixed evenly.
Top with Oat Milk

Slowly pour the cold oat milk into the glass. Stir everything together well so the flavors blend, and your iced latte is ready to enjoy.
Top Tips for Lavender Vanilla Oat Latte
Adjust the lavender syrup to taste: Lavender can be quite strong, so start with a small amount of syrup and add more as needed. It's easy to add more, but hard to balance the flavor if it's too overpowering.
Use freshly brewed espresso: For the best flavor, brew fresh espresso or strong coffee. Pre-brewed coffee can taste flat, which may not complement the floral notes of the lavender syrup as well.
Froth the oat milk for extra creaminess: If you want a creamy texture, frothing the oat milk before adding it to your latte will give it a smooth, airy feel. If you don’t have a frother, you can use a whisk or shake it in a jar to get some foam.
