Here's the fun part: aquafaba's magic comes from proteins that act a lot like those in egg whites. How to Make and Store Aquafaba

The easiest way? Just open a can of chickpeas and strain the liquid. That's it! If you want to get fancy and fresh, soak dried chickpeas overnight and simmer them until tender, then save that cooking liquid. If it's too thin, gently reduce it on the stove to thicken it up.

Store your aquafaba in a sealed jar or bottle in the fridge for up to a week, or freeze it in ice cube trays for quick, portioned use later. When you're ready to shake, just thaw and go!

What Is Homemade Simple Syrup?

A basic simple syrup consists of one part sugar and equal parts water. It's easy and fast to make at home, but you can also buy it at most stores. The ratio of sugar to water varies depending on the desired thickness and added ingredients, but typically, it's equal parts sugar and water.

The purpose of making simple syrup is to dissolve the granulated sugar into liquid form so that you can easily stir into drinks. Making your own at home allows you to customize it any way you'd like. You can use regular white sugar, brown sugar, or even cane or coconut sugar.

Check out steps to make both hot-process and cold-process.  

Steps to Make Hot-Process Syrup: 

Add 1 cup of sugar and 1 cup of water to a small saucepan. Heat over medium heat until boiling dissolved sugar. Cool to room temperature, then pour into an airtight storage container. 

Steps to Make Cold-Process Syrup: 

A cold-process sugar syrup is simply the process of adding sugar to a liquid, usually water, and stirring occasionally until the sugar dissolves in roughly 10-15 minutes.

The cold-processed is good for making a small batch, as cold-processed syrup tends to have a shorter shelf life than hot-processed homemade syrup. You can also adjust the amount of sugar for extra-sweet syrup.

Does Simple Syrup Go Bad?

The short answer is yes! As with any other food item, if not stored properly, the concoction will eventually spoil due to the growth of bacteria or mold. However, if stored correctly in an airtight container with the lid on in a cool, dry place away from direct sunlight, your homemade or store-bought rich simple syrup should last for several months without any issues.

How to Store Syrup Properly 

If sealed properly - unopened - it can last for up to 12 months when stored properly in a cool, dry place away from direct sunlight. But for optimal storage, I recommend putting it in the fridge or freezing it. 

To yield the best results, store your simple syrup in a sterile container with a tight seal. Store container in the fridge.

You can sterilize your glass container by submerging it in boiling water and either air drying or drying it in an oven.

I really enjoy working with either of these two options, glass jars or glass bottles with a flip top, or a mason jar.

Refrigerator Instructions  

For optimal freshness, an opened bottle should be refrigerated and used within one to six months. 

However, if you store your open bottle properly (in an airtight container), it can last up to 12 months as well!

Freezing Instructions  

Yes! I love to do this as I often am not able to use my homemade simple syrups in a timely fashion, so they are stored in an airtight container in the freezer. I've been using these awesome storage containers for the freezer recently for pretty much everything. 

Souper Cubes: Freeze almost anything in these convenient containers, they come in a variety of sizes. This ice cube trays gift set will cover all of your freezing needs.

Shelf Life of Simple Syrup Variations: 

• Store-bought: If stored properly in a cool dark place such as the fridge or a pantry, the store-bought simple syrup has a longer shelf life of up to 6 months, this is likely due to added preservatives. Obviously keeping the syrup beyond the expiration date calls for double-checking if it's still good or not.
• Unopened: Unopened store-bought simple syrup could be stored for a long time at room temperature in a pantry, you could even freeze it for longer. The good news is that unopened simple syrup can last practically forever.  Once it's opened, it's best to store it in the refrigerator for up to 6 months.
• Homemade: A hot-processed simple syrup of just sugar and water should last up to 1 month if stored properly.
• Infused: By adding herbs, spices, or fruit you've greatly reduced the shelf life of your simple syrup. Mostly due to the fact that those added fresh ingredients will start to break down. If stored properly, and infused simple syrup will last for 1-2 weeks.

What does zero-proof alcohol mean?

Zero-proof alcohol is a term used to describe alcoholic beverages which have had the alcohol removed down to zero or nearly zero. Fruit adds a beautifully sweet flavor to drinks in many forms. From berries to peaches and citrus to cucumbers, there are lots of options for adding sweetness to a drink. 

Muddling entails smashing fruit with a wooden or metal stick, a tool known as a muddler, to release juices and essential oils, which can be used to make flavorful mocktails like the lychee mojito. If you don't have a muddler, you can use a fork or potato masher for a similar effect. 

Fruit juice and purées

Sweet fruit juices, like apple and orange juices, and sweet juice blends, like lemonade and limeade, can work in lieu of simple syrup too. They can be sweet enough. If a recipe calls for one of these, increase the amount a little at a time until it reaches your desired sweetness level. 

Puréed fruit made in a blender or food processor is another great way to add sweetness to a drink. The Bellini mocktail is famous for its peach purée base with prosecco - and no added sweetener. 

Jam

You can make a simple syrup substitute from jams and preserves for drinks that lend themselves well to a fruity flavor. Why Would Anyone Want These Types of Drinks Anyway?

There are so many reasons why mocktails and virgin drinks are becoming increasingly popular. Many pregnant women seek out some of their favorite drinks as mocktails so they can still enjoy parts of the party they miss. We're not denying any pregnant woman her craving for a pina colada! Finding a signature virgin drink for baby showers or bridal showers is popular as well. This ensures everyone, young and old, can get in on the fun and enjoy delicious drinks.

So what's the "healthier option"? Agave contains less glucose than table sugar, giving it a lower glycemic index, meaning that it will absorb slower in the body than sugar.  Additionally, simple syrup contains more sugar than agave does, so keep that in mind if you're watching your sugar intake.

So when it comes to choosing between simple syrup and agave nectar for your next drink, it all comes down to personal preference or simply what you have on hand! If you like a mildly sweet flavor then go with simple syrup; if you prefer something with a more depth of flavor then try using agave instead! No matter what sweetener you choose, it's sure to make your next cocktail or mocktail even tastier!

The main difference between simple syrup vs agave lies in their composition - where agaves are composed primarily of fructose sugars whereas simpler syrups contain both fructose sugars as well as glucose sugars which makes them sweeter overall!

Additionally, while both types are great options when looking to add sweetness to recipes/drinks - certain uses will require one over the other depending on what kind of results you're looking for! 1:1 Water & white sugar, then adding additional flavors is pretty easy. Most flavor infusions are as simple as boiling the ingredient with the water mixture, then straining & enjoying. Some popular additions are:

• Orange, lemon, or lime peels
• Rosemary & thyme sprigs
• Cinnamon sticks
• Jalapenos
• Mint
• Vanilla

Uses for Simple Syrup

Simple syrup can be used in many recipes, including cakes, cookies, pies, pastries, and sauces. In addition to adding sweetness to baked goods and sauces, simple syrup can be added to coffee or tea for extra flavor.

It can also be used as an ingredient in cocktails or mocktails; just add one part simple syrup for every four parts liquid. This will give your drink the perfect level of sweetness without being overly sugary.

Uses for Agave Nectar

Agave nectar can be used much like simple syrup but with one major difference-since it has a neutral flavor and less sweetness than simple syrup does, you'll need to add slightly more agave nectar (about 25% more) when using it as a substitute for simple syrup in drinks or recipes that call for sweetness.

Agave nectar can also be used as a substitute for honey in recipes such as marinades or glazes; however, since it has a milder flavor than honey does, you may need to adjust your recipe accordingly by adding additional spices or herbs for extra flavor if desired. Additionally, agave nectar can also be added directly onto foods such as oatmeal or yogurt for an extra touch of sweetness if desired!

Simple Syrup To Agave Syrup Conversion  

When converting from one type of sweetener to another (for example from simple syrup to agave nectar), always remember that each type has its own unique set of properties - so while they may serve similar purposes they will not necessarily produce identical results!

For instance when converting from simple syrup to agave nectar - use 1 tablespoon plus 2 teaspoons of agave per 1 tablespoon of simple syrup! Additionally - make sure you keep an eye out for any other differences that might arise due to using one sweetener over the other - such as texture consistency, etc!  

Other Sweetener Options

While simple syrup and agave are not the only sweet syrup used in cocktail recipes

Maple Syrup - A very popular alternative to simple syrup. It is recommended to use 100% pure maple syrup. In a pinch, you could use any pancake syrup you have on hand but note it could contain high fructose corn syrup.

Golden Syrup - You might assume golden syrup is honey, but it's comprised of sugar, water, and citric acid. The mixture is boiled, and not stirred until reaching a golden color.

Honey - A great option! Honey on its own will not mix well in icy drinks or iced tea. If your beverage is hot, go for it! To prepare thinner honey, heat equal amounts of honey and water the same way you would when making a simple syrup then add to your drinks. The sweetness level of a 1:1 honey and water mixture will be moderate. For a richer flavor, opt for 2:1 honey to water.

Brown Sugar Syrup - Treat creating this syrup the same way you would a simple syrup, equal parts brown sugar to sugar. The added molasses yields a beautifully unique flavor. An excellent choice when using dark spirits, tea, or coffee. Brown sugar varieties include light and dark brown sugar, demerara sugar, turbinado sugar, and muscovado sugar.

Sugar Beet Syrup - Similar to molasses in color and maple syrup in taste and honey in consistency. Lovely in warm drinks!
